Chewy Brownie Cupcakes

We made these very tasty brownies for St. Patrick's day yesterday. They are not completely 100% THRIVE since I used cocoa and chocolate chips: THRIVE does not yet carry cocoa or chocolate chips. Although I've had a few of you request that I put in a product suggestion to corporate that they find a way to freeze dry chocolate chips. Wouldn't that be amazing! Yum...

Anyway, I had to post these because they were very tasty (read: I ate WAY too many!). I double the recipe and then added mint extract to half of them. (I don't like mint and my husband does) and before you think we ate the entire double batch (yes they are ALL gone), we did share a bunch at a church event we had last night:

1 2/3 cup granulated sugar
3/4 cup THRIVE butter powder
2 T. THRIVE Whole egg powder
1/2 c. water
2 tsp. vanilla extract
1 c. all purpose flour
1/3 c. whole wheat flour (you could do all white flour, but I always like to throw in a bit of whole wheat)
3/4 c. unsweetened cocoa
1/2 tsp. baking powder
1/4 tsp salt
1/4 c. mini chocolate chips

PREHEAT oven to 350ยบ F. Place liners in muffin pan.

COMBINE granulated sugar, butter and water in large bowl. Stir in eggs and vanilla extract. Combine flour, cocoa, baking powder and salt in medium bowl; stir into sugar mixture.

FILL each cup 1/3 full. Use a small spoon (I used a baby spoon) to create a hole in the batter in the middle of each cup. Drop 10-12 mini chocolate chips in each hole, then cover with additional batter so that each cup is 3/4 full.

BAKE for 13 t- 18 minutes or until wooden pick inserted in center comes out slightly sticky. Cool. Frost if desired. (I used a quick homemade cream cheese frosting (cream cheese, sweetened condensed milk, butter and powdered sugar) and sprinkled them with crushed oreos.
